I got this recipe from a friend. I thought what the heck, I'll try it. I'm glad I did-it's actually good. Well, not as good as normal pancakes (lets be honest) but good enough.
1/2 C oatmeal (put in food processor or Magic Bullet til a fine powder)
then add the following to the food processor and mix:
4 egg whites (I just used 2 whole eggs)
1/2 C cottage cheese
large handful of fresh spinach
I used blueberries as well. Hayden loved them. Can't wait to try it out on Zach and Avery! Zach is hard to fool when it comes to healthy stuff but I'll give it a go.
